The project includes plans for a tap room that will offer visitors a view of the Great Miami River to accompany their brew, founder Shane Juhl told us. The park and museum just outside downtown Dayton might be the only place in the country where visitors can watch ale being brewed using historically accurate, mid-19th-century methods and then, most importantly, buy a glass or growler and try the product. But it's Carillon Brewing Co., on the edge of the park grounds, that makes the venue unique. The craft brewery offers food and drink prepared in the style of the 1850s. The star of the show is the beer, brewed over wood fires with historically accurate equipment.
