I used to say when I was working that you can't always (or even usually) be nice at closing time. It goes beyond that. One ends up getting taken advantage of, and it's really easy to end up quite misanthropic even if one wasn't already. Treating the cash like cash remains the biggest risk to a licensed business, but I would rank being too nice as second, even ahead of oversampling the stock.

As someone who’s never been in the industry, I perceive it’s more complicated than it looks from the outside. Packy is way too nice of a guy to run a bar. I’ve never seen the guy in a bad mood.

The restaurant I dined at this evening added a 2% charge to the bill describing it as a "temporary transaction fee" in lieu of pricing increases (or so they say...how do you know unless your a regular). It wasn't a charge for using a credit card to cover the restaurants merchant fee, which is more and more common these days, but just 2% taxed to each check. Curious to see if it will ever be removed.

To be fair, the charge was apparently spelled out on their website-although in fine print at the end of the menu section. I am notorious for just looking at the bottom line of a restaurant bill just to see what I have to tip without looking at the itemization. They could put a charge for caviar I did not order on my check and I would be none the wiser. However, one of my fellow diners and his girlfriend are notorious for inspecting the bill under a magnifying glass and discovered the 2% charge and wondered what it was all about. Another friend, who is not old and senile, said he noticed the charge on the website when he was looking at the menu before we dined, so at least we had an explanation. I tipped my usual amount-it certainly was not the servers fault. But I agree. It is sneaky. I personally tip less or not at all on takeout these days when I see the restaurant is adding a percentage charge for using a credit card. I view the credit card merchant fee as a cost of doing business for the restaurant and should not be passed on to the customer who often has no choice but to pay it. I owned a restaurant for a number of years and we were always negotiating the fee and absolutely hated it and tried to get the best rate, but again felt it was just a cost of doing business and would never think of passing it on, just like the fee I paid to the linen company.
