Has anyone been to Maplewood kitchen & bar yet? We went Monday and it was slammed. This place was freakin delicious. Def going back!

I've been.  The space is really nice, tall and clean, white with marble tops, and I love that the self-serve water has a plain soda water tap, which is what I always drink, and the food was great.  I just didn't like paying up front when you order.  Are you supposed to leave a tip? there is a line on the receipt for tip, but there is basically no service.  I don't get it.

This is like most fast casual places that are sweeping the country. You place your order and get a number and they bring it out to you. I work in the food industry in Los Angeles, and as the minimum wage pushes $15 an hour, this is the direction most new restaurants are going. The mid-tier casual "fine" dining restaurants aren't going to be able to afford to pay their bills, and are getting squeezed out. As the Director of Operations for a restaurant group told me the other day, the restaurant landscape in LA is going to change drastically in the next 5 years. Professional table service with polished servers will only be available at top tier, i.e. expensive restaurants. The $15/hr minimum wage is actually going to eliminate the very jobs the people it was supposed to help have now. McDonald's is going to go to an all touch screen system with no counter employees.

As far as tipping, I tip 20-25% for good service at a sit-down restaurant. At the fast casual places with a tip line on the receipt, I tip a buck or two depending on the size of my order.

A Northside restaurateur is opening a new concept in the former Tacocracy space that will have an emphasis on small bites and craft beer and wine retail.

Suzanne McGarry, owner of Bistro Grace, is opening the Hamilton at 4029 Hamilton Ave. on Feb. 1. While the restaurant will serve a menu of small bites and shareable plates created by Bistro Grace chef David Bever, there will also be an extensive wine and craft beer selection that can be purchased for carryout.

I tipped $2-3 ... I assumed they take the total amount and divide it out among the employees.

... and believe it or not, the service was great. They circled around and checked on us a few times. It reminded me of how Dewey's servers serve.

Tipped employees have a much lower minimum wage.  If they're talking about eliminating the lower minimum wage then obviously that will affect the business model.  As-is, owners make the tipped employees do tons of prep and closing duties since they're working for much less than what it would cost them to have a cook or other non-tipped employee sweep, mop, and roll silverware.

A lot of pizza chains pay their drivers true minimum wage in the store but tipped worker minimum wage when they're out on runs.  The POS system automatically makes the switch when a driver clocks out a run.

Tipped employees in some states have a much lower minimum wage. In CA, tipped employees have the same minimum wage as everyone else, hence my discussion of the problems mid level restaurants are having. In Ohio, tipped employees have a lower minimum wage, for now.

In local news, my sources tell me that Collective Espresso is moving out of the Contemporary Art Center in March and will be replaced by something new from Wellman Brands.  Meanwhile, minimal work is underway on the new Melt location in Northside.  The space appears to be framed but nothing else is going on.

The weird 30-hour provision in the Affordable Care Act complicated things for a lot of restaurants and forced them to hire more people who were limited to 3 or 4 shifts per week with relatively few full-time employees.  I don't know what the motivation was for this part of the law but it was a nuisance that sent steam blowing out the ears of hardcore Republican owners.

The sad state of Joe's Diner:

city-7807_zpsfi7mo2n7.jpg

city-7806_zpssoptahe9.jpg

city-7804_zps0fnktyyn.jpg

I heard a rumor that Julian Rodgers is no longer involved in running Joe's Diner. Can anyone confirm?

I don't know why Skyline Chili doesn't just open up in the diner. When the new bar opens in the former Neon's space, they would make a killing.

Critical Mass & Parking.  A Skyline needs to make $2,000-$2,500 a day minimum to be profitable.  Other than weekend nights, this location would be a ghost town.  Look at the Mainstrausse location for reference.

I get your point, but a change of a few blocks makes a big difference. The "Mainstrasse" location isn't on Mainstrasse, it's a few blocks away in a strip mall on West 3rd Street:

https://www.google.com/maps/@39.0876302,-84.5206445,3a,75y,198.44h,91.27t/data=!3m6!1e1!3m4!1sen-CO-GS9Q723gBdlyy7dg!2e0!7i13312!8i6656

As for the Joe's Diner location... it's an architectural gem, and though today that block feels a bit abandoned (with Neon's closed and Ziegler under renovation), it could be a GREAT location in a year or two. I expect the new pool complex at Ziegler will be very popular, and having a Skyline next door would be a natural fit. Once the Neon's space is re-occupied, Ziegler is completed, and the underground garage is operating, that block of Sycamore will be a significant "entry" point to OTR. I'm not a fan of drive-thrus in general, and particularly not in OTR, but if Skyline insisted on having a drive-thru, they might be able to squeeze one in off of Cogswell Alley (though I'd much prefer they use that space for a walk-up window and outdoor seating):

https://www.google.com/maps/@39.1095726,-84.5105615,3a,75y,111.44h,75.53t/data=!3m6!1e1!3m4!1sccW2EFuCGhpLypVYbw4KFw!2e0!7i13312!8i6656

If Ziegler Park is even a quarter as popular as Washington Park, there's going to be a lot of foot traffic on Sycamore starting next year. Anyone walking from the new Ziegler Park Garage to the Main Street bars will walk right past the diner.

An inexpensive restaurant in the diner would capture the Ziegler Park crowd, the Neon's crowd, OTR/Pendleton residents who want something cheaper than the existing OTR options, and the lunch crowds from the Courthouse, the Hanke Exchange, new UrbanSites offices on Main (above Japp's), and UrbanSites offices in Pendleton. Parking wouldn't be an issue for those lunch crowds since those people would be in OTR already.

The Mainstrasse location I am referring to is now a Popeye's, Skyline closed it a few years back because business couldn't be sustained on bar traffic alone.  I wouldn't be surprised if this area is more of a food truck Mecca until some more development is completed.

If Ziegler Park is even a quarter as popular as Washington Park, there's going to be a lot of foot traffic on Sycamore starting next year. Anyone walking from the new Ziegler Park Garage to the Main Street bars will walk right past the diner.

Which was pretty much the plan with Joe's.  Sadly it took so long to get a meal there they pretty much lost any lunch crowd they could have had.

^ You can't make a reasonably priced, excellent, basic hamburger; you can't run a diner.

One of these oversupplied 1950s places needs to serve an real '50s menu that limits them to cucumber sandwiches, egg salad and thin soup. I bet there won't be so many of them around once you take away their 3/4 pound cheeseburgers and fried mozzarella sticks.
